Crock Pot


Chicken Noodle Soup
Ingredients
2 cans of chicken broth
4 stalks of celery
1-2 C. baby carrots or 2 regular chopped carrots
1 yellow onion, diced
Curly egg noodles
2 chicken breast
2 cubes of chicken bouillon
Spices: salt, pepper, basil, garlic, bay leaves, oregano

Directions
Put all your ingredients in the crockpot except the noodles and bouillon cubes.  For the spices, give each one several shakes and put in two bay leaves.  Cook on for 6-8 hours. Half hour  prior to being done add noodles and bouillon cubes and more water if needed.  Serve when noodles are soft.

Cream of Chicken Crockpot
Ingredients
4 chicken breast
1-28 oz cream of chicken

Directions

Place in all ingredients in crockpot and cook for 6-8 hours.  (Chicken is frozen when I put it in the crockpot).  Serve with rice and veggies.

***Another variation is to add italian seasoning packet while cooking and 30 minutes prior to finishing cooking add 8 oz. of cream cheese.

Italian Crockpot Chicken
Ingredients
4 boneless chicken breast
16 oz. bottle of Italian dressing (I made it)
1/2 C. parmesan cheese
Italian seasoning
4-6 potatoes scrubbed and cubed
16 oz. bag of mini carrots

Directions
Spray crockpot with cooking spray.  Put a small amount of Italian dressing on bottom and place chicken in pot (mine is still frozen).  Pour some Italian dressing on it and sprinkle half the cheese and sprinkle some italian seasoning on it.  Place next two chickens in pot. Sprinkle remaining cheese on the chicken.  Pour carrots on top and put more italian dressing on it and sprinkle italian seasoning. Place potatoes on top and pour remaining dressing and seasoning on potatoes.  Cook 6-8 hours.

Chicken Taco Soup
Ingredients
1 onion, chopped
1 16 oz can black beans
1 16 oz can kidney beans
1 16 oz can corn (drained)
1 28 oz can of crushed tomatoes
1 packet of taco seasoning
1-2 boneless skinless chicken breasts

Directions
Mix everything together in a slow cooker except chicken. Lay chicken on top and cover. Cook on low for 6-8 hours or 3-4 hours on high.  30 minutes before serving, remove chicken and shred.  Return chicken to slow cooker and stir in.  This is good with cheese, sour cream, tortilla chips, etc.

Enchilada's Honey-Lime
Ingredients
1.5 lb. pork or chicken, cooked and shredded (in crockpot)
20 flour tortillas
20 oz. green Enchilada Sauce
1/2 C. green chilies
Cheese- mozzarella and cheddar as desired

Sauce:
1/3 C. honey
1/4 C. lime juice
1 Tbs. chili powder
1/2 Tsp. garlic powder

Directions
Cook the meat in the crockpot for 6-8 hours.  Then marinate the meat in the sauce for at least 30 minutes.   Put a thin layer of Enchilada sauce in the base of the pan/two pans. Layer Tortilla's with chicken and cheese.  Roll and place in pan, smothering with enchiladas sauce and cheese.  Cook at 350 degrees for 30 minutes.
